What Is A Gluten Free Diet?

 

A gluten free diet is one that completely eliminates the consumption of the protein gluten, found in wheat, barley, rye, triticale and most oats.  A gluten free diet is the only treatment for celiac disease, an auto-immune disease causing severe harm to the intestines and other organs of the body.  It is also being adopted by more and more people who simply feel better by not consuming gluten, which is known as being gluten intolerant.

 

Eating gluten free can be challenging at first, but all it takes is a little help from your gluten free guru (me!), who’s been eating gluten free for over five years now.

Gluten can be used as a filler in many personal care products, including shampoo, conditioner, lotions, and even lipsticks.  Always read the ingredients, or contact the manufacturer before using a product. Gluten can also be found in vitamin and supplement formulas as a filler.

 

Many restaurants are starting to offer ‘gluten free’ items on their menu, but often they are not free of cross-contamination.  For example, the waitress may tell you the french fries are gluten free, but in fact, the breaded chicken fingers were deep fried in the same oil as the fries, making the french fries contaminated.  Always ask if the food would have come in any contact with gluten.

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
