Meat croquettes made with rice or bulgur: Kibbeh
These Mediterranean meat croquettes are made with a grain-based dough and a savory stuffing. The dough is a flavorful mix of bulgur, lean ground meat, onion, a blend of spices (white and black pepper, nutmeg, clove, cardamom, cinnamon, ginger), chili paste and flour. The stuffing contains lamb and/or beef, butter, chili paste, clarified butter (ghee), pine nuts, ground walnuts and the same spice mix used for the dough. Fry the prepared kibbeh until golden brown.
