Zucchini fritters: Eejet kousa
These fritters are easy to make and will help you get your kids to eat their veggies. Grate the zucchini, and add garlic, onion, seven-spice (Lebanese spice mixture of chili powder, cinnamon, black pepper, cilantro, ginger, clove and nutmeg), egg, flour, baking powder, mint and parsley. Shape the fritters into small rounds, and cook them in a frying pan with a bit of oil.
