VIDEO: Crispy Zucchini Potato Cakes
Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!
INGREDIENTS
- 5 Potatoes
- 1.5 Cup shredded zucchini
- 3/4 Cup shredded cheese
- 3/ Cup milk
- 1/3 Cup coriander, chopped
- 1/3 Cup basil, chopped
- Parmesan, to sprinkle
- Salt and pepper, to season
METHOD
- Chop the potatoes in half, boil until very tender and drain.
- In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly.
- On a baking tray, spoon out the zucchini-potato mixture and form into balls.
- Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
- When golden, remove from oven... and enjoy!

Chorizo and Mozzarella Ravioli

Make the pasta dough following the directions on the recipe
- Half a recipe of basic egg pasta
- Ravioli Filling:
- 100 g Chorizo, chopped
- 1 Cup fresh spinach
- 1 tsp chilli flakes
- salt and pepper to taste
- 1/3 Cup finely grated mozzarella
- Pasta Sauce:
- 1 Onion, finely diced
- 2 Cloves garlic, crushed, finely chopped, or finely grated
- 400 g tomatoes (fresh or canned, whatever is most readily available)
- 1 Tbsp Balsamic vinegar
- Salt and pepper to taste

Pour the flour onto the work surface, digging a well
- 2.5 cups of flour
- 3 eggs
- 1 tablespoon olive oil
- scant 1 tsp salt
- 1 tablespoon of water if necessary
