- 5 large potatoes
- 1/2 cup parsley
- 2 cloves minced garlic
- 1/2 cup cilantro
- 2 cups shredded cheese
- 1 cup milk
- Sour cream
method
- Boil and drain the potatoes
- In a mixing bowl, combine the potatoes with parsley, minced garlic, cilantro, shredded cheese and milk.
- Mash the mixture thoroughly.
- Shape into palm-sized balls, then flatten on a sheet pan
- Put in oven for 20 min at 355° F
- Layer, spreading generously with sour cream
- Garnish, and enjoy!

- 1 large apple peeled, cored, diced
- ¼ Cup brown sugar packed loosely
- 1 tsp white sugar
- 1 tsp lemon juice
- ½ tsp Apple spice

- Cinnamon sugar (mix ½ tsp cinnamon with 2 Tbsp white sugar)- set aside for dusting
- Caramel (can get this near apples in grocery store)
- 4 Cups vegetable oil- for frying

Make the pasta dough following the directions on the recipe
- Half a recipe of basic egg pasta
- Ravioli Filling:
- 100 g Chorizo, chopped
- 1 Cup fresh spinach
- 1 tsp chilli flakes
- salt and pepper to taste
- 1/3 Cup finely grated mozzarella
- Pasta Sauce:
- 1 Onion, finely diced
- 2 Cloves garlic, crushed, finely chopped, or finely grated
- 400 g tomatoes (fresh or canned, whatever is most readily available)
- 1 Tbsp Balsamic vinegar
- Salt and pepper to taste
