Ingredients

  • 8 ounces of fresh chèvre (goat cheese), plain
  • 1 egg
  • 3/4 Tbsp chives, chopped
  • 1/2 tsp lemon juice
  • 2 tsp broccoli florets, finely chopped
  • salt and pepper, to taste
  • a pinch of salted garlic
  • 1/2 cup Parmesan cheese, grated

Preparation

Step 1

In a medium bowl, mix all ingredients together by hand until well blended. Cover and refrigerate at least one hour or until ready to fill ravioli.

Recipe Note: Variations include the use of flavored goat cheese, e.g., herbed. Also, you may add finely diced chicken, steak, or lamb for a hearty meal. Other ideas include chopped artichoke hearts or mushrooms.

  7. Slice and serve!
