Easy Spicy Egg Omelette

- Eggs -2
- Oil - 1 tbsp + greasing
- Chopped Onion - 1/2 cup
- Chopped Green Chillies - 2 Nos.
- Cilantro - 2 sprigs
- Curry Leaves - 1 sprig
- Turmeric Powder - a pinch
- Salt - 2 pinches (1 pinch for 1 egg)
- Crushed Pepper Powder - a pinch

Basic Chicken Curry

A well rounded, straightforward, tremendously good chicken curry and it's all yours
- 2-3 tbsp cooking oil
- 1 tsp mustard seeds
- 2 crushed cloves
- 1 crushed cardamom
- 2 crushed peppercorns
- 2 medium sized red onions, sliced thin
- 1 tsbp finely chopped ginger
- 2 tbsp finely chopped garlic
- 3 serrano peppers, sliced in half
- handful curry leaves
- 1-2 tbsp red chili powder(cayenne pepper)
- 3 tbsp coriander powder
- 1 tsp cumin
- ¼ tsp turmeric
- 1 tomato, diced
- ¼ cup unsweetened, frozen coconut slices, thawed at room temperature (optional)
- 1 lb skinned, bone-in whole chicken, cut into 2 " pieces
- ½ to 1 cup water
- ¼ tsp garam masala
- 2-3 sprigs cilantro
Egg Curry

A spicy southindian gravy made with spices and eggs
- boiled eggs - 4
- onion - 1 large
- coconut - 1/4 cup ground paste
- mustard seeds - 1/4 tea spoon
- ural dal -1/4 tea spoon
- Fennel seeds - 1/4 tea spoon
- bay leaf -1
- anistar - 1
- Oil -4 tea spoons
- To grind:
- ginger - 1 inch piece
- garlic - 3-4 gloves (The one I used are little big in size)
- Tomato -2 medium
- To roast and grind:
- channa dal - 1 table spoon
- coriander seeds - 1 table spoon
- Red Chilies - 3 (It was medium spicy, you can increase the numbers to your personal taste)
- Pepper - 4-5
- cumin seeds - 1 tea spoon
- Fennel seeds - 1/2 tea spoon
- cinnamon - 1 small piece
- clove- 3-4
