Mini Cherry Pies
These mini cherry pies are so cute, we could eat them right up!
INGREDIENTS
- Dough
- Cherries
- Apricot, diced
- Apple, diced
- Almond Flakes
- White sugar
- Brown sugar
- Baking powder
- Butter
- Egg Yolk
- Water
METHOD
- Preheat the oven to 350° F.
- Roll out some dough, and then use a cup or a cookie cutter to cut the dough into circles.
- Place each circle into the cavities of a silicone muffin mould (or greased tin), and press into the bottom and along the sides.
- Pit the cherries, and throw into a pot.
- Add sugar, baking powder, and water, and simmer until it thickens to a saucy consistency.
- Use a spoon to fill each pie to 2/3 to the top.
- Optional: for a bit of variety, you can also fill the pies with apricots + brown sugar + butter, or apples + brown sugar + almond flakes.
- For the lattice crust: use a pizza slicer to cut out thin strips of dough, then lace together to form a lattice.
- Use a cup to cut the lattice into circles, then gently place on top of the uncooked pies.
- Brush with egg yolk and sprinkle with sugar.
- Bake the pies at 350° F for 25 minutes, or until golden.
- Let cool for 15 minutes, then gently lift the pies out with the edge of a knife.
- Enjoy!

Game Day Skinny Chili Dog's n' Onion Rings

So here is a great dinner for today's afternoon game keeping it healthy!
- 2 pounds lean Turkey ground beef
- 1/2 cup chopped onion
- 1 1/2 cups ketchup
- 1/4 cup white sugar
- 1/4 cup white vinegar
- 1/4 cup prepared yellow mustard
- 1/2 teaspoon celery seed
- 3/4 teaspoon Worcestershire sauce
- 1/2 teaspoon ground black pepper
- 3/4 teaspoon salt
- Place the turkey ground beef and onion in a large skillet over medium-high heat. Cook, stirring to crumble, until beef is browned. Drain. Transfer the beef and onion to a slow cooker and stir in the ketchup, sugar, vinegar and mustard. Season with celery seed, Worcestershire sauce, pepper and salt. Cover and simmer on Low setting for a few hours before serving.enjoy!
- Skinny Baked Onion Ring's
- 1 sweet yellow onion cut into rings
- 1/2 cup flour
- 1 cup low-fat buttermilk
- 1 egg white
- 1/4 tsp kosher salt
- 3 cups crushed Corn Flakes
- cooking spray
- Preheat oven to 400 degrees.
- Directions
- In a large bowl, add the flour. In another large bowl, add the buttermilk, egg white, and seasonings and whisk to combine. Add the crushed coating to a gallon size zip lock bag.
- Dip each onion ring into the flour, then into the buttermilk, and add to the zip lock bag. Work in small batches (I put about 5 onion rings in the bag at a time), then seal it and shake well to coat. Place the coated onion rings on a non-stick baking sheet in a single layer. Repeat for the rest of the onion rings.
- Spray the coated onion rings with cooking spray. Bake for 20 minutes, or until crispy. Enjoy!

I don't remember where I found this recipe but it beats all the others we have tried
- 2 cups all purpose white flour
- 1 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon bking powder
- 1 cup buttermilk
- 1 LARGE sweet onion (we also have used N.Y.BOLD onions)
- Vegetable oil for deep frying
