Modified Smith Island Crabcakes
Lightly crisp on the outside moist and meaty in the inside . No fillers here
- 1 lb special crab meat
- 1 lb claw crab meat
- 2 eggs
- 2 tbl Dijon Mustard
- 1 tbl Old Bay Seasoning
- 3 tbl Mayonaise
- Fresh saltine crackers
- Salt and pepper to taste
- Butter and oil for frying

Mix first 6 ingredients, Roll into balls, about the size of a small plum
In a gallon size freeze bag dump one sleeve of saltines, close bag and with rolling pin crush the crackers none any larger than a pea. Put on a plate
Heat up skillet, melt butter and add oil . heavy coating in pan.
Roll the balls of crab meat mixture in the crackers and place in the pan. Do not place them to close because now you will mash them into a patty shape.
Fry until golden brown About 5 min per side
