For these bite-sized helpings of mashed avocado and shrimp, begin by peeling 2 avocados and removing the flesh. Place the avocado in a blender, add 1/2 cucumber, diced, 1/3 cup plain Greek yogurt, a generous squeeze of lemon juice and a little pepper. Mix and pour into a pastry bag. Pipe onto individual serving spoons, top with shrimp and serve fresh!
