To make 12 spring rolls:
12 sheets of rice paper
1 small bundle of rice vermicelli
12 deveined shrimps
2 small carrots
2 large handfuls of baby spinach
Soy sauce or fish sauce for dipping
Soak the rice vermicelli in a bowl of warm water for 4 minutes. Strain and put aside. Peel the carrots and then grate them.
Peel the avocado, cut in half, remove the pit and then cut into long slices.
The rice paper
Fill a glass baking dish with cold water and then add one sheet of rice paper. After 1 minute and 30 seconds, remove the sheet and place it on a cutting board.
The baby spinach
Place 3 baby spinach leaves onto the edge of the rice paper.
Cover the spinach leaves with the rice vermicelli.
Add a bit of grated carrots...
...and then a slice or two of avocado.
And finally, finish with a shrimp sliced in half.
Fold the outer corners
Fold the outer edges onto the filling.
Fold the inner corners
Fold the inner corners up until they touch each other.
Finally, roll until there is no more rice paper left.
Repeat with the remaining sheets of rice paper.
Refrigerate until it's time to serve them.
