Les Barlettes

Christophe Adam is constantly innovating. His latest invention is ‘les barlettes’. Though they look similar to an éclair, they’re actually little individual tarts that are filled with a mixture of ganache, fruit and other flavors.  The one with white chocolate ganache, orange flower blossom and a beet and raspberry caviar is particularly palate-pleasing! Each barlette is assembled by hand, meaning that it takes a skilled pastry chef over an hour to make just 40 of these beauties!
