Place pie pastry into a pie pan. Saute fresh spinach for 4 minutes in a buttered skillet. Let drain. Prepare the rest of the recipe with eggs, cream and milk. Season to taste. Fill the crust with the spinach, fresh diced salmon and pour the egg mixture on top. Cook for 30 minutes at 375° F. For added richness, throw in a dash of nutmeg, grated Swiss or Parmesan.
