Mind the Temperature

The ideal brewing temperature is between 195° - 205° F (or 91° - 96° C), erring on the higher side of that estimation. If you're using an automatic coffee maker — a good one, that is — the machine should make this calculation automatically, but for other methods of brewing you'll need to ensure this step on your own. To do this, boil water in a kettle; once it's reached the boiling point, let it rest for 30-45 seconds to allow the temperature to decrease to the proper level. Then pour!
