My garlic is sprouting… can I still eat them?

Yes.

Garlic keeps for months at a time, and sprouts are totally fine. In fact, according to a some studies, sprouted garlic is actually better for you than fresh garlic. Sprouted garlic contains more antioxidants. The sprouts themselves are bitter, especially at the top. So cut off the sprout at the top, slice the clove in half and remove the sprout from the center.

 

You can also use a sprouting clove as an excuse to try growing your own garlic. Just pop it in a small pot with some dirt and keep it on your windowsill.

To store garlic optimally:

Keep it whole in a dark and dry place

Give it good air circulation to prevent moding. Try, for example,  placing it in a mesh or wire basket or a paper bag.

Only use sealed containers if you’re keeping minced or peeled garlic
