VIDEO: Crispy Zucchini Potato Cakes

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!

  • 1/4 pumpkin
  • 8 beautiful potatoes
  • 2 cups water + 2 cubes chicken
  • scant 1/2 cup sour cream
  • nutmeg, salt, pepper
  • chopped parsley, croutons

mix all of them!

  • - 2-3 chopped apples
  • - 1 small chopped white onion
  • - 2 tsp of coconut oil
  • - 2 tsp of mild curry powder
  • - 1 tsp of ginger
  • - 1 L vegetable stock
  • - 1 sugar pumpkin or Kabocha Squash
  • - 1/2 tsp of cinnamon
  • - 1/2 tsp of nutmeg
  • * heat oven to 400 C

Heat the oven to 350 degrees

  • 9 pounds sugar pumpkins or butternut squash
  • 2 tablespoon vegetable oil
  • 1 can of pears, cut into 2 inch chunks
  • 10 garlic cloves chopped
  • 3 and 1/2 tablespoon curry powder
  • 4 quarts chicken broth
  • 1 and 1/2 cup dry white wine
  • 1 cup heavy cream
