Ingredients
- 1 1/2 LB Ground beef
- 1/4 Cup rice (uncooked)
- 1 Tbs Garlic salt
- 1/2 Tsp Oregano
- 1 Egg
- 1 Tsp Pepper
- 1 Tsp Cumin
- 1 Tsp Flour
- 12 Cups water
- 1/2 Tsp Salt
- Mix together to make meatballs
- Boil water seasoned with salt and Cumin (1/4 Tsp each)
- Reduce heat cook for 35 minutes (cover off)
- 1 Celery diced
- 1 Cups green beans
- 4 Carrots
- 1 Can corn
- 4 Potatoes
- 2 Tbs Onion
- 1/2 Small cabbage
- 1 15oz Can of tomato sauce

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
