  • 10 cups thinly sliced unpeeled cucumbers
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 3 large white onions thinly sliced
  • 1/3 cup pickling salt(coarse salt)
  • 4 trays ice cubes
  • 3 cups white vinegar
  • 4 cups white sugar
  • 11/2 tsp each turmeric,celery seed, and mustard seed

Step 1

Combine cucumbers and peppers and onions in a large non-metalic pot and mix in salt and ice cubes. Let stand for 4 hours and then draid and discard any ice that is left.

Step 2

Combine remaining ingredients in a very large pot and bring to a boil and boil until sugar is dissolved. Mix in vegetables and bring back to a boil.

Step 3

Remove from heat immediately . Spoon vegies and brine into hot sterilized jars and seal. Hot water process the jars for 5 minutes. Let stand for 3 weeks before eating


Recipe makes approximately 14 wide-mouth medium sized canning jars
