How you like your veggies cooked is a matter of personal taste, but these 15 veggies come out on top when roasted in the oven!

The basics

In a large bowl, mix the vegetables with a little olive oil and sea salt, adding spices if you wish. Lay your veggies on a baking sheet or in a large baking dish, ensuring that the vegetables do not form too thick of a layer. Then pop in the oven at 400 °F. The cooking time will depend on the vegetables. For carrots and beets, pre-steam them slightly before roasting.
