Perk up your plate: How to cook with coffee

How to use espresso?

The popular Italian dessert coffee called affogato makes the best use of espresso. It involves pouring warm espresso onto big scoops of ice cream. The hot and cold contrast and amalgamation of textures make it deliciously divine.

Espresso can also be used when cooking veal or to add creaminess to soups. French culinary master Sébastien Gaudard once created a coffee chestnut soup that he garnished with flakes of Parmesan.  Then there's the all-time favorite Italian tiramisu that's made by soaking ladyfingers in espresso. Even a dark chocolate mousse could use a hint of coffee, as chocolate and coffee pair well together.
