This rustic main course from the South of India is chock-full of fresh vegetables cooked in coconut oil and subtly seasoned with spices. It is perhaps one of the lightest Indian dishes out there that can be eaten on its own (though traditionally it's served with a bowl of rice). Here's a recipe where the flavors of the myriad vegetables shine through without being overpowered by spices.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
