Jalapeño popper chicken taquitos

These jalapeño popper chicken taquitos will get gobbled up quickly at your Cinco de Mayo gathering, so you might want to make back-up, just in case. The filling is made from chicken breasts cooked in the slow cooker with a combination of cream cheese, jalapeños and a handful of spices. Then just roll up the cooked mixture in taco-sized tortillas and bake until brown and melty.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
