Lardo is pretty much what it sounds like: cured strips of pig's fat seasoned with spices and herbs. It's just another type of salumi, in other words, Italian cured meat like salami or mortadella. Serve it with bread, in pasta dishes or as an alternative pizza topping. Yum!
