Preparation

Step 1

Cut a sheet of parchment paper (not aluminum). Drop a handful of sauerkraut. Season with salt and spices.

Step 2

Place slices of lemon, a spoonful of light cream and over the slice of salmon fillet. Close the parchment so no steam escapes.

Step 3

Cook in microwave 15 minutes. Sauerkraut will remain crunchy with all the good flavors preserved.
