  • 4 cups of cooked Quinoa ( note: 1 cup uncooked quinoa yields about 4 cups cooked)
  • 1 diced/sliced red onion
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar ( or white)
  • salt and pepper to taste
  • 1 cup chopped spinach
  • 3 tsp of Dijon
