Ingredients

  • 1 2/3 cups sugar
  • 2/3 cups Carnation evaporated milk
  • 2 tbsp butter
  • ½ tsp salt
  • 1 ½ cup semi-sweet chocolate chips
  • 2 cups miniature marshmallows
  • ½ cup walnuts
  • 1/2 cup raisins
  • 1 tsp vanilla

Preparation

Step 1

Combine sugar, carnation milk, butter and salt in a saucepan on medium heat.

Step 2

Cook and stir over medium heat until mixture comes to a boil. Boil for 4 to 5 minutes stirring constantly.

Step 3

Remove from heat.

Step 4

Stir in marshmallows, chocolate chips, nuts, raisins and vanilla. Stir until marshmallows melt and blend.

Step 5

Pour into a greased 8” square pan.

Step 6

Chill, cut into squares and refrigerate.

Note: one can of evaporated milk is enough to make two batches.

INGREDIENTS

  •  1.3 cups beetroot
  • 2 eggs
  • 2 tablespoons oil
  • Juice of 1/2 lemon
  • 4/5 cup flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • Melted dark chocolate

METHOD

  1. Preheat the oven to 350° F. 
  2. Put the beetroot, eggs, oil and lemon juice in a food processor, and blend until smooth.
  3. In a bowl, whisk together the flour and sugar.
  4. Add the blended beetroot mixture, and mix until smooth. 
  5. Add the baking powder and mix until fully incorporated. 
  6. Pour the batter into silicone cake moulds. 
  7. Bake for 30 minutes, or until you a pick comes out clean. 
  8. Top with melted dark chocolate, and enjoy!
