This way the natural cream present on the espresso is conserved, while the flavor and caffeine content are 'lengthened' by the water. If you want to make a long coffee at home, it's better to make filter coffee rather than attempting to dilute an espresso on your own - you're likely to end up with a very bitter coffee if you do it yourself!
