What exactly is an espresso?

To make a real espresso, one has to follow 3 rules:

• It's made on demand using a percolator
• It's made by running almost boiling, pressurized water for 25 to 30 seconds through a layer of finely ground and packed coffee. 
• It should never be more than 1 ounce.
