Spaghetti alle Vongole

Spaghetti with clams is a widely popular pasta dish in many parts of Italy, although the dish is originally from Naples, where it is prepared in white or red sauce. This version with white clam sauce has no tomatoes and is simple to prepare. It requires perfectly al dente pasta that gets combined with live clams that open during the cooking process. Long, flat pasta noodles are typically used (angel hair, spaghetti, linguine), and the dish gets topped off with a handful of fresh parsley. A sprinkling of crushed red pepper flakes may be added for an extra kick.
