Bison Steak

The mighty bison is a tragically overlooked red meat option. Packed full of protein and nutrients, it is much lower in fat than beef, and has a slightly sweeter and richer flavor. It also contains the highest known levels of conjugated linolaic acid, which is known to be a fat-blocker and anti-carcinogen. What a star! This recipe keeps it simple: simply pan fry and serve with a rich herby sauce.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
