Wild Garlic and Mint Chimichurri

We've covered mint sauce to serve with lamb, but how about chimichurri instead?  Originally from Argentina, chimichurri is typically made with finely chopped parsley, minced garlic, vegetable oil, oregano and white vinegar. This recipe substitutes mint for parsley and uses wild garlic and red wine vinegar.
