To cook with cacti, cut the paddles into squares or rectangles and place in a large saucepan filled with enough water to cover. Add: ¼ onion, 1 clove garlic, a few sprigs of cilantro and salt. Heat the saucepan on the stove, and allow the cacti to boil until they are tender and have a darker hue. Depending on the size of the leaves, this could take 10 to 25 minutes. When it begins to boil, stir well and add 1/2 teaspoon of baking soda to the water, to help manage the thick liquid containing the cacti. While cooking, do not leave the pan unattended, as it can easily boil over. When cooked, drain the cacti in a colander and then remove the onion, garlic and cilantro.
