Use the best quality stock

Unless you end up with really large quantities of fat from your roast, you're going to need some stock. Either make it yourself, or splurge on the best quality liquid stock you can find. Making stock at home is easy, but takes a bit of forward planning. However, if you get into the habit of making and freezing stock each time you do a roast or bring home a cooked chicken, you’ll always have a supply on hand!

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
