Mexican marinade

For a marinade that reminds you of the sun and the sea, try this recipe that features tequila!

In a salad bowl, mix 4 tablespoons of olive oil, 1 tablespoon tequila, the juice of 1/2 a lime and 4 cloves of garlic. Add the marinade to chicken thighs. Season with salt and pepper, then let marinate for at least 2 hours in the fridge.

Bake the chicken in the oven and serve with guacamole and salsa.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
