Indian marinade

To make an Indian-style marinade, start by adding 3 tablespoons of olive oil to a large bowl. Then add 2 finely chopped garlic cloves and the following spices: 1 teaspoon of paprika, 1/2 teaspoon curry powder, 1/2 teaspoon cumin, 1/2 teaspoon powdered coriander. 

Mix well and add this marinade to the chicken. Refrigerate for at least 2 hours. Then you can either make chicken skewars and cook them on a grill pan, or simply stir-fry the chicken in a hot pan. Serve with basmati rice and lentils for an authentic Indian meal.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
