VIDEO: Rainbow Shrimp Pasta
This multi-colored Rainbow Shrimp Pasta is utterly delicious, and sure to impress when you serve it up!
Ingredients
- 2 oz red spaghetti
- 2 oz green spaghetti
- 2 cups shrimp
- Pepper
- Salt
- Paprika
- 1/2 cup cream cheese
Method
- Boil the red and green spaghetti separately in salted water until al dente.
- Fry the shrimp in a pan with plenty of salt, pepper and paprika.
- Add 1/2 cup of cream cheese, and stir through until combined.
- Arrange the cooked spaghetti in an alternating pattern on a plate.
- Top with the creamy shrimp sauce
- Garnish, and serve!

Pumpkin Flax Muffins

These are gluten-free (uses almond meal instead of flour), and are chock-full of healthy fats (almonds & flax)
- 1/3 cup almond meal/flour
- 2/3 cup flax seed
- 1 scoop vanilla protein powder
- pinches of baking powder and salt
- 3/4 cup egg substitute
- 1/2 cup canned pumpkin
- 1/4 cup sugar free syrup (I used gingerbread flavor, but you can use regular maple syrup)
- sweetener, to taste (I didn't use any)

This is a great Fall comfort food recipe that you can make in your crock-pot
- 1 can (425g) pumpkin puree (NOT pumpkin pie mix)
- 1 extra large can (794g) crushed tomatoes (no salt added if available)
- 2 tsp minced garlic
- 1 tsp ground cumin
- 1 tsp pumpkin pie spice
- 1 tbsp ground red pepper
- 1 tbsp chili powder
- 1/4 tsp sea salt
- 1 bag (340g) frozen shelled edamame
- 1 medium yellow onion (about 340g)
- 1 medium green bell pepper (about 126g)
- 1 medium zucchini (about 190g)
- 1-1/4c white mushrooms (about 170g)
- 1 can (425g) reduced sodium black beans
- *optional* topping of fat-free shredded mozzarella or Greek yogurt

- 3 tbsp of Bob’s Red Mill Flaxseed Meal
- 12-14 drops liquid stevia (or other sweetener – I used the NuNaturals Vanilla)
- 2 tbsp Libby's canned pumpkin puree

- 1 tbsp Hershey’s Special Dark Cocoa

- 1 tbsp melted peanut butter (for topping)

This pumpkin pie is so tasty you won't even miss the crust
- Filling:
- 1 15 oz can of pumpkin
- ½ cup of sugar (or sweeten with a little Splenda to taste)
- 3 large eggs
- 3 tablespoons of honey
- 2 teaspoons of cinnamon
- ½ teaspoon of ground ginger
- ¼ teaspoons of cloves
- ½ teaspoon of allspice
- ½ teaspoon of nutmeg
- ¼ teaspoon of salt
- Streusel:
- ½ cup of unbleached flour
- ¼ cup of brown sugar
- 1 teaspoon of ground ginger
- 1 teaspoon of cinnamon
- ½ cup chopped pecans
Healthy Pumpkin Muffins
Naturally sweetened with honey
- 1 1/2 cups whole wheat pastry flour
- 1 Tbsp cinnamon
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/3 cup 100% pure raw honey
- 1/3 cup unsalted butter (5 tbsp + 1 tsp), melted
- 1 cup canned pumpkin purée
