VIDEO: Cheesy Stuffed Chicken Bombs

Bursting with cheese and wrapped up in bacon, these stuffed chicken breasts are totally irresistible!

Ingredients

  • Chicken breast
  • 6 -8 bacon slices
  • 1 cup spinach leaves
  • 1 small jar semi-dried tomatoes
  • 1 cup shredded cheese
  • Salt and pepper

Method

  1. Carefully slice the chicken breasts, forming a pocket, without cutting right through.
  2. Fry the breasts until golden brown on both sides.
  3. Layer bacon slices on a chopping board.
  4. Place the chicken breast on the far left, and top with spinach leaves, semi-dried tomatoes and cheese. Season with salt and pepper.
  5. Roll the chicken breast in the bacon slices, folding it closed as you go.
  6. Cook in the oven for 20 minutes at 375°F.
  7. Serve, and enjoy!

This is a great Fall comfort food recipe that you can make in your crock-pot

  • 1 can (425g) pumpkin puree (NOT pumpkin pie mix)
  • 1 extra large can (794g) crushed tomatoes (no salt added if available)​

  • 1-1/4c white mushrooms (about 170g)​
  • 1 can (425g) reduced sodium black beans​
  • *optional* topping of fat-free shredded mozzarella or Greek yogurt​

This pumpkin pie is so tasty you won't even miss the crust

  • Filling:
  • 1 15 oz can of pumpkin
  • ½ cup of sugar (or sweeten with a little Splenda to taste)
  • 3 large eggs
  • 3 tablespoons of honey
  • 2 teaspoons of cinnamon
  • ½ teaspoon of ground ginger
  • ¼ teaspoons of cloves
