What is amaranth?
What is amaranth? It's a small, yellow, crunchy seed, about the size of a sesame seed. It is often prepared and consumed the same way as rice and oats, but while it looks like a grain and shares similar properties, it is actually a pseudo-cereal. Amaranth was one of the most important foods of the Aztecs and is still widely consumed in Mexico today. Amaranth is super versatile and full of nutrients, so you can and should eat it every single day!
