To make Eggs Benedict, Hollandaise is an absolute must. Unless you’re a classically chef, however, the thought of making a good Hollandaise sauce can be daunting. With this kitchen hack, you can make this must-have brunch staple in the comfort of your own kitchen.

Ditch the double boiler. All you'll need is a microwave and a blender.

In blender, combine egg yolks, water, lemon juice, and salt. Use microwave to melt butter, then slowly pour into blender on high speed. Your sauce will thicken right away, and voilà! Hollandaise sauce has never been simpler.

 

Serve over English muffins with poached eggs and you have yourself an Eggs Benedict.
