Steam

Cover the potatoes with a lid and steam for 12 to 15 minutes. They should be soft to the touch yet still relatively firm on the inside. 

Steaming the potatoes before baking helps them release a bit of starch, which in turns creates a crispy coating around each fry. This layer of starch will absorb a little bit of the olive oil, resulting in a golden, crunchy outside.
