Fruit and nut energy bars

Try these fantastic no-bake energy bars made with just 3 ingredients. Mix together some almonds, dates, prunes or any other combination of dried fruits and nuts, in order to obtain a kind of batter. Continue until you've rolled the ingredients into a ball, and place it onto a piece of plastic wrap. Shape the ball into a square by flattening out the batter until it's almost 3 cm thick. Wrap up and place in the fridge for several hours (one hour is long enough, but for best results, leave for several hours or up to overnight). Unwrap the batter, cut the square into small bars and wrap them up individually. Store your homemade energy bars for up to a week in the fridge or freezer. Don't hesitate to add chocolate chips, shaved coconut, cinnamon, chopped pecans or anything you like!

  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
