Confetti cake

Your kids' classmates (and teachers!) won't be able to resist this colorful masterpiece. It's especially perfect for birthdays.

Make a traditional sponge or pound cake base in a round cake mold. Using a whisk, mix 1 cup Philadelphia cream cheese with 2/3 cup softened butter. Add 1 teaspoon coconut extract, 1/2 teaspoon vanilla extract and 1 1/2 cups of sifted powdered sugar. Cut the cake base in half, and add frosting to the center. Spread the rest of the frosting all over the outside of the cake, and cover with multi-colored sprinkles.
