Beef tenderloin is much cheaper than steaks, and there are many ways to prepare it as a festive holiday dish, including this French-inspired recipe. Start by browning the roast on each side in a lightly greased Dutch oven. In a skillet, saute 1/2 pound sliced mushrooms, then add 1 1/2 tablespoons sour cream and a bit of salt. Spread out a sheet of ready-made puff pastry, arrange half the mushrooms on it, add the roast and finish with the remaining mushrooms. Fold the dough over to enclose the roast and brush with egg yolk. Bake for 40 to 50 minutes at 350 °F (makes a roast of approximately 2 pounds).
