Bacon, egg and cheese cups

You can omit the bacon, if you really want to health it up in the mornings, otherwise a little fat won't hurt you. These egg cups are otherwise veggie-packed with chopped mushrooms, red bell pepper and green onions. A little sprinkling of grated Cheddar on top, and these beauties will puff up in your muffin tin in 15 to 20 minutes. Freeze the leftovers for hurried mornings, and gently thaw in the microwave.
