Spinach croquettes

In a bowl, mix eggs and milk with some finely chopped basil, salt and pepper. Add flour, chopped fresh spinach, finely chopped onion, grated Parmesan and breadcrumbs. Mix and form into balls. Arrange on a baking sheet lined with parchment paper and bake for 15 minutes at 350 °F. Serve with ketchup or a creamy yogurt sauce.
