Bacon, mushrooms and cheese are three fixings that always taste right when cooked together. Topped on a bed of rice, it's the coziest meal to tuck into during the last winter chill. Place cooked rice on the bottom of your baking dish and top with sauteed mushrooms and cooked chopped bacon. Cover with a generous layer of fresh grated parmesan. Bake for 10-15 minutes until the cheese is melted and lightly browned. Garnish with chopped parley to finish.
