Not to mention, they're an excellent, low-cal veggie option for those who are watching their figure. Start by steaming endives, then place them into a baking dish. Beat 2 egg yolks with low-fat sour cream and a bit of grated gruyere or swiss cheese; season to taste. Pour this mixture on top of the endives, and bake for 25 to 30 minutes at 350 °F.
