INGREDIENTS
For the batter:
- 3 eggs
- 3/4 cup sugar
- 1/3 cup of cocoa powder
- 1 cup flour
- 2 tablespoons neutral oil
- 1 cup of of natural yogurt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
For the frosting:
- 2 cups chocolate chunks
- 3 cans of condensed milk
- 2 and 1/2 cups thickened cream
- 1 tablespoon unsalted butter
METHOD
- In a pan, melt together the condensed milk, the chocolates in pieces and the butter. Slowly fold in the thickened cream. Mix, without stopping, until it is smooth and thick.
- Transfer to the refrigerator and allow to cool for 1 hour.
- In a bowl, mix together the eggs and sugar. Add the oil and mix again.
- In another bowl mix together the flour, cocoa powder, baking powder and the bicarbonate soda. Pour in the egg mixture, mix together, then add the yogurt.

Grease and sprinkle cocoa powder inside two springform pans. Divide the batter mixture between them, then bake at 360°F for approximately 20 minutes.
- Remove the cakes from the oven, and allow to cool.
- Spread some of the frosting between the layers of the cake, and generously spread around the outside.
- Decorate the cake with Kit Kats, extra frosting and Fererro Rochers, in your style!

Traditional Teriyaki Chicken

This is my version of the delicious "mall-style" teriyaki chicken found at the food court
- Marinade:
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 1/4 cup Mirin
- 2 tablespoons brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Teriyaki Sauce:
- 1/3 cup Mirin
- 2/3 cup soy sauce
- 1/3 cup brown sugar
- 1 teaspoon sesame oil
- 2 tablespoons rice wine vinegar
- Dash red pepper flakes
- 2 tablespoons canola oil

Homemade Chicken Teriyaki

Great for the grill, week night or a party
- 8 boneless skinless chicken thighs (Any) chicken will do
- 1/2 cup pineapple, grapefruit, or orange juice
- 1/2 a cup of soy sauce
- 1 cup brown sugar
- 2 tbls olive oil
- 4 tbls ketchup
- 1 tbls ginger fresh is best but powder will do just add extra
- 2-3 cloves of garlic minced fine
- 1 tsp hot sauce
- 2 tbls Sesame seeds
- 1 tbls parsley
- Salt and pepper
Spicy Hawaiian Teriyaki Chicken Rice Bowl

FOR THE RICE: Combine all ingredients in a rice cooker
- Rumbi Rice:
- 2 1/2 cups water
- 1 (14oz) can coconut milk (about 1 1/2 cups; I used light coconut milk)
- 1/2 Tbsp sugar
- 2 cups long grain white rice
- 1 (15oz) can red beans, drained and rinsed
- Spicy Hawaiian Teriyaki Sauce:
- 3/4 cups Mr. Yoshida’s teriyaki sauce (found in the grocery store by the BBQ sauces; I actually used Kikkoman Original Teriyaki Sauce.)
- 1 tsp soy sauce
- 2 tsp chili garlic sauce (in the Asian section of the grocery store; I used the one in the clear plastic jar with the green lid.)
- 1 tsp fresh ginger
- pinch of salt
- 1 Tbsp of brown sugar
- 1 Tbsp cornstarch (if needed)
- 2 Tbsp COLD water (if needed)
- Vegetables & Chicken:
- 2 chicken breasts (about 2 cups, cubed)
- Salt & Pepper
- 1 Tbsp canola oil
- 4 carrots, peeled and grated (approximately 1 1/2 cups)
- 3 celery stalks, washed and sliced (approximately 1 1/2 cups)
- 1 zucchini, chopped into small cubes (approximately 1 1/2 cups)
- 1 1/2 cups chopped broccoli florets (approximately 1/2-3/4 large head of broccoli)
