Got some leftover eggplant? Cut it into thin slices and cook in the skillet with a bit of olive oil until lightly browned. Toast bread slices, and spread with crushed garlic. Add the eggplant, 2 tomato slices and a few cilantro leaves. To flavor it up, dab on a bit of traditional wholegrain mustard, and voila, you can chow down.
