Vegan avocado cake

Ok, we cheated again...avocado is indeed a fruit! But it's used mostly in savory recipes as well. It has a relatively neutral taste and contains an ideal amount of fat for making vegan chocolate mousse. In your food processor or blender, pulse avocados with a plant-based milk (almond, soy, etc.), maple syrup, almond puree and tapioca flour. Then add melted chocolate and pulse again. Layer the mixture onto a crust made of crushed hazelnuts, almonds and pistachios, then store in the fridge until firm. Sprinkle with more crushed nuts to serve.
