Creamy veal escalopes would also make a great Christmas dish. Use cepes, wild mushrooms or a mix. In an oven-proof skillet, brown veal escalopes (or turkey if you prefer) in butter for 1 to 2 minutes on both sides. Transfer to the oven and cook for 4 to 5 minutes at 350 °F, or until cooked through. Remove and allow to rest on a warm plate. For the sauce, saute 3 ounces sliced mushrooms and 1 crushed garlic clove in 2 tablespoons butter for 4 to 5 minutes. Stir in 1 tablespoon mustard, 2 tablespoons sour cream, salt and pepper. Add 2 tablespoons chopped chives. Serve the creamy mushrooms on top of the veal, and sprinkle with a handful of fresh herbs.
